Instructions
  1. Combine the first seven ingredients in a 6-quart saucepan. Bring them to a boil and simmer on low for 40 minutes.
  2. Add beans, corn and chicken. Increase heat to high until the chili comes back to a boil.
  3. Cover and reduce heat to low. Simmer another 5 minutes or until the barley is tender.
  4. If the chili becomes too thick, add more chicken broth. Serve with shredded cheese and sour cream.
