Instructions
  1. Boil water. Place the sweet potato noodles in a bowl. Cover them with boiled water. Let sit for 20 minutes.
  2. While the sweet potatoes are soaking, chop your vegetables.
  3. Drain the sweet potato noodles once they are ready.
  4. Pour hot water into a bowl. Run one rice paper wrapper through the water quickly. Repeat two or three times if needed. The wrapper will soften and get sticky. Lay it on a plate.
  5. Place some lettuce, carrot, cucumber, cilantro and sweet potato noodles and 2 or 3 shrimp in the middle of the wrapper. Fold over the ends and then roll the wrapper around the filling, like a burrito.
  6. Repeat to make three more fresh rolls.
  7. We like to serve it with duck sauce.
